Tabbouleh salad (aka tabouli) is a very popular Mediterranean salad throughout the world and is becoming mainstream in American grocery stores all over the country.
Tabbouleh is a traditional salad served in many Lebanese homes and probably eaten at least once a week. You will typically find finely chopped parsley, tomato, onion, mint, and bulgur in a tabbouleh salad. The salad is drizzled with a lemon-olive oil mix. It can be served as an appetizer or side salad throughout the year but mainly in the summer.
Tabbouleh is a favorite in the plant-based community because it is fresh, easy to make, and packed with healthy ingredients. Parsley is an anti-inflammatory that can reduce your risk of cancer and improve your immune system, while bulgur is a fiber-rich whole grain. The tomatoes and lemon juice provide a good amount of vitamins and minerals.
Rachel will teach us how to make a healthier version of tabbouleh without the oil and rather than using bulgur she will use hemp hearts.
Ingredients for Tabbouleh:
*1 large bunch parsley (I like curly)
*1-2 medium tomatoes (depending on how juicy you want your dish) 3 tbsp of hemp hearts
*1-2 avocados
*1 medium onion
*1-2 lemon, juiced (to taste & depending on size)
*Salt to taste
Ingredients for Hummus:
*2 cans chickpeas, rinsed and drained
*3 cloves garlic
*Juice of 1 lemon
*2 teaspoons ground cumin
*2 tbsp of tahini
About Rachel:
Rachel Haddad is a certified personal trainer, certified health coach, a middle school math teacher, and the founder of Chronic Movement. At the age of 24, she began to notice changes in her body. By age 28 she would be diagnosed with multiple sclerosis.
